After meticulous hand-plucking of the tender buds and leaves, the tea undergoes a precise and complete full-oxidation (fermentation) process. The leaves are then carefully rolled and high-fired to achieve the signature reddish-brown color and the slight “sinewy” structure (suggested by the name Sanhujin). This masterful control of oxidation is essential, ensuring the malty characteristics are fully developed while guaranteeing a vibrant red infusion that retains its clarity and sweetness across multiple steepings.
